Saturday, Aiden’s B-Day

Aiden’s B-Day went well, I do not in any way claim to be a pro at children’s birthday parties, on my best day I give mine a C+. I am so impressed with the mothers who can pull of a great Birthday party, they truly have a gift. Aiden had his corn dogs, and I made the Mac-N-Cheese puffs, I also did the same thing with the crescent rolls in the muffin pan, added pizza sauce, mozzarella cheese, pepperoni and as Zack suggested garlic salt. And he was right, it gave the puffs just the right amount of pizzaz! I also made BBQ chicken and potato salad. I am often very busy the day of any party or gathering, so I like to prep the chicken the night before.

 I take legs and thighs, douse them in melted butter, lemon and lime, sprinkle each top with garlic salt and Chile powder and then bake in the oven at about 375 for 45 mins to an hour. (depending on how thawed out the chicken was when I started) 1/2 way through baking I flip the chicken over and season the other side. When done the skin should be slightly crispy. I then take my favorite BBQ sauce and put some in a large zip lock bag and add the cooked chicken. If the bag gets too full I start another one. Since I have a large family, I usually make up about 5-6 bags, each with cooked chicken and sauce and keep it in the refrigerator until we are ready. This way the day of the event we can just throw the chicken on the grill, get the skin crispy and it is all done, and no one is sitting in front of the grill all day, in the Arizona summer, no one wants to sign up for that!
For me nephew, the pizza puffs were a big hit, and for me, that is all that really matters. Look at his adorable face munching on them.

This past week marked my second full week home. I did finally get the office cleaned and organized Woo-Hoo! Last week seemed busier than the first week, more to do and less time to do it in, I am sure that is just my perspective kicking in to what is now less new to me. But it was still great, quality time. The kids are getting used to me being home and they at least least as if they like it.  (for now!) I have been reading a lot and going through old pictures and recipes, I will feel much more fulfilled when I get some of that up on the blog. I am also going to San Diego to check up on my little sis this weekend, so that is something to look forward to and get ready for, I need to read up on some dining options. Any suggestions?
