Last night I was seriously under pressure to get dinner made quick, I did not have a lot of time, but I had a craving for enchiladas. I threw these together pretty fast, but I did have the turkey shredded and soaking in the red sauce already from when I smoked it on Sunday. You could make this easily with shredded chicken, (the whole kind sold in the store) or even just a few types of cheese.
2 Cups shredded Turkey
1 24oz Can of Red Chile sauce
> Soak turkey in sauce for as long as you are able, overnight is ideal.
2 cups shredded cheddar cheese
1/2 diced onion
1 Cup Sour Cream
1 can El Pato Salsa de Jalapeno
I took each tortilla spread sour cream, then spread turkey/sauce mixture over sour cream, added a little cheese and rolled tortilla up and placed in deep baking dish. Repeated this with as many tortillas that would fit, then poured El Pato sauce over the top, added more cheese on top and baked at 350 until cheese was bubbling up. On the plate garnished with onion, black olive and a little sour cream. They were fantastic. Authentic – no, good for a quick meal, yes.
