Lemon Bars

A neighbor let my boys come over and pick as many lemons as they wanted, so they came home with three full bags. I put it out there are Facebook asking what could I make with the lemons and got a lot of really great ideas. I still have lemons and have quite a few recipes I am going to try. I ended up looking through the cabinet to see what else I had and what I could make and decided on lemon bars. I am not eating sugar right now, so I only tasted a little sliver, but I handed them out to neighbors and friends and got a lot of good feedback.

Lemon Bars

Crust
1 1/2 cups of flour (I used O Organics whole wheat)
2/3 cup confectioners sugar
3/4 cup of butter

Pour all into a bowl and mix until it is all moistened. Then pat down into a pan making a crust. (I used a 9×13 pan) Bake in a pre-heated, 375 degree oven for about 20 minutes.

Lemon filling
4 eggs
1 1/2 cup of white sugar
1/2 cup fresh squeezed lemon juice (or store bought)
3 tbsp flour (I used O Organics whole wheat)

Blend ingredients on a high speed until frothy. When done mixing pour over the baked crust. Then put back into the oven for another 20 minutes. Let cool and then dust with about 1/3 cup of confectioners sugar evenly over the top, then cut into squares and serve.
