Like I said, the Citrus chicken turned out fantastic and there was plenty of chicken left over. So I decide to make “Build Yourself” Gyro’s, homemade Tzatziki sauce and some red potatoes with a little olive oil, garlic and Parmesan cheese. All I had to do was dice up some chicken, set out sliced tomatoes sliced red onion, feta cheese and warm up some flat bread. Then I had to make the sauce. I love making a totally new meal out of leftovers. Then for desert we had vanilla ice cream with crushed up sizzle snacks on top. Yum!
32 oz Greek plain yogurt
16 oz sour cream
4 cloves garlic
Handfull of fresh diced dill – about 2-3 tbsp, to taste. (I happen to love dill)
2 tbsp lemon juice (or squeeze about 1/2 a lemon)
2 tbsp olive oil
2 cucumbers peeled and seeds removed, dice into large chunks
Add ingredients to food processor and blend well. If when you open the yogurt or sour cream there is any water that has risen to the top, strain that out. Put mixed sauce into bowl, cover and place in the refrigerator for about an hour or longer.
Dill, easy to grow.
