Banana Bread is such a treat and also so easy to make. I seem to be making a lot of it lately. I have a bread maker which makes it easy and fairly fool proof, so I have been experimenting. I swear there is a million recipes online and the bread maker even came with one. Over the past few weeks we added various nuts, cocoa, chocolate chips. Then I started making French Toast with it and the kids literally freaked out! They thought it was an amazing magical breakfast that only I had discovered. One of my favorite things is when they think I am a cooking wizard with special powers no other human can possess. My next arena will be stuffed french toast, I want to play around with some custard flavors and see what works best.
Choose your favorite banana bread recipe, and then here is the French toast batter I use.
(For 10 thick slices)
5 Large Eggs
1 tbsp Cinnamon
1 tbsp Brown Sugar
1 tsp Vanilla Extract
2/3 cup of Whole Milk (I have also been known to use flavored creamer)

Powdered Sugar, Nuts, Berries, etc for Garnish
Beat mixture in a large bowl. I like to use the banana bread after it has been in the refrigerator (sealed) overnight. This way it is easy to work with. Make nice thick slices and soak each slice in the mixture for a few seconds. Too long and it will get soggy and hard to work with.
Then place in a skillet with melted butter (I probably use too much butter) on medium heat. Fry until golden brown on each side. Serve ASAP. Garnish as desired.
