cocktails, vodka, tequila, horchata
I figured I need to do another cocktail post. My last one focused on Low to No Sugar Cocktails. This one is about some fun drinks I have made since then and one in particular I have fallen in love with! There is also a very fun alternative to jello shots you can bring to a party that I promise will be a smash hit!

For starters I have said before, I like to use Sprite Zero in my cocktails, but you could certainly use something else, like soda water or another brand. I also like to infuse vodka with flavors but the choices at the store are really unlimited.

I previously posted my Tequ’ero, this one is only different in that I infused the tequila with Pomegranate seeds (juice) and put some seeds on top for garnish.

Pomegranate Tequ’ero
4 cups Sprite Zero
2 shots tequila – Muddle 2 tbs of seeds into one cup of tequila and allow to sit overnight
2 tbsp lime juice
Hand full of pomegranate seeds for garnish
Pour over crushed ice
pom tequero
Note: I personally add more tequila to my drink, and let others decide for themselves.

I am in LOVE with this next drink and I am pretty sure I have sold several people on it’s deliciousness recently! This was a big hit over the holidays and will now be a staple at my parties. You will need Horchata for this one, which you can attempt to make yourself. We have a Mexican Restaurant up the street that makes an excellent version and I just swing by there and grab a few larges to go and I am all set. Kern’s also makes a decent one you can get in a half gallon. There are several recipes online, but since I do not make my own I cannot vouch for any of them.
What is Horchata? Here is the Wikipedia explanation: Horchata is the name of several kinds of traditional beverages, made of ground almonds, sesame seeds, rice, barley, or tigernuts.

Then I put 3 cups of Smirnoff Whipped Cream vodka in a mason jar with a cinnamon stick and 1/2 cup of Hershey’s unsweetened Cocoa powder. I let this sit for a month and then strained it several times through cheesecloth. As an alternative I would say you could use chocolate syrup and part Smirnoff Whipped Cream and part Smirnoff Cinna-Twist to get a similar flavor. In the recipe I will refer to mine as Choco-Vodka mix!

Over ice pour one shot of Choco-vodka mix
Mix with about 1 cup of Horchata
Garnish with a dash of cinnamon or a cinnamon stick
That’s it! Easy and delish!!

This next one is a guaranteed party pleaser! Moonshine Cherry Cheesecake Bombs! My friend Heather Time makes them at all our parties and they fast became a replacement for the jello shot. I would call these delicious and dangerous! (Thanks Heather for sharing your steps!) Again there are options, the Moonshine cherries are strong, if you want a milder flavor you can soak cherries in vodka, just drain the cherry juice from a jar of cherries and refill with vodka, let sit for a few days. I like the moonshine cherries, they are a lot of fun and then you can also make drinks with the moonshine. Tip: Freeze the Moonshine Cherries for about 8 hours, making the cherries harder and easier to work with. Don’t worry, it wont freeze over.

Moonshine Cherry Cheesecake Bombs
8 Oz Cream Cheese, whipped
1 Cup of confectioners sugar
1/2 tsp Vanilla Extract
Beat together the above ingredients until smooth and creamy.
Dip cherry into mixture getting a decent amount on the cherry
Crush about 1 cup of graham crackers into a fine crumb. Then dip the covered cherry into the graham crumbs, coating all the cream cheese mix. (see photo)
Cream cheese mix and graham crumbs should be enough to coat all the cherries in the jar.

Last one, but first experiment with my bitters, and I have to say I was pretty impressed. I received a bitters kit and book from my best food friend for my Birthday and wanted to try something immediately. I made this for me and my sisters really quick and it was smooth and refreshing.

Lemon Tequila
Pour one shot of a clear tequila over ice, add a slice of lime, fill remainder of glass with Sprite Zero and about three dashes of Lemon Bitters.

Do you put the whole jar of cherries in the freezer or do you need to take them out of the jar?

I keep the whole jar of Moonshine Cherries in the Freezer. Then I take them out of the jar, strain them and pour any residual moonshine back in the jar. Just as I need them, like for Moonshine Cherry Fudge.
