I cannot believe summer is almost here! I better get started planning some activities for the kids. It gets so hot in Surprise, AZ that the only thing we can do outdoors is swim. We could always plan a few day trips to the mountains and maybe over to California and the beach. Other than that staying inside too much will drive us all stir crazy!!
Today I decided to try out a Chocolate Banana Bread, I dug up the recipe from an old list I had. I don’t think I have ever made it before, so it may have been my Mother’s or Grandmothers. I thought I had walnuts which I planned on using, but I only had pecans, no problem, it was scrumptious!!
Chocolate Banana Bread w/ Pecans
2 Cups white sugar
3 Cups all purpose flour
2 Tsp baking soda
1/4 Cups unsweetened cocoa powder
1 Cup dark chocolate chips (or semi sweet)
1/2 Cup chopped pecans
4-6 Ripe, smashed bananas (maybe even a little over ripe)
1 Stick of softened butter
2 Tsp pure vanilla extract
1/2 Cup Sour Cream
Preheat oven to 350 degrees. Mix flour, sugar, baking soda and cocoa powder together and set aside. In a large bowl blend the eggs, sour cream and butter, then mix in the bananas and vanilla extract. Slowly sift in the dry mix while mixing. At the very end add the chocolate chips and pecans. Then bake in a greased pan for about 60 minutes.
I used one large 11 3/4 X 5 5/8 X 3 3/16 inch pan; however this would be perfect for a couple of medium bread pans or a few small ones.
