Alright folks, I need some help here! My Dad used to make a really great carrot cake. Below is the recipe I found except the cream cheese frosting was not listed, but I know he always used it. He passed away nine years ago in July and I am not even sure this is the recipe he always made but I cannot confirm for sure. I feel like there were raisins and maybe sometimes two kinds of nuts? I also feel like maybe sometimes he added shredded coconut and sometimes he didn’t? So I am going to ask for some help out there in the blogesphere! What is the best carrot cake you ever had or made? Can you link up the recipe and/or tell me what ingredients are missing?
To any of my family, if you remember this cake he so proudly brought to a ton of family functions, can you tell me if this seems like what you remember? Did he ever give you the recipe?
Dad’s Carrot Cake
3 cups grated carrots
1 cup chopped walnuts
4 Eggs
1 ¼ cup vegetable oil
2 cups white sugar
2 tsp vanilla extract
2 cups all purpose flour
2 tsp baking soda
2 tsp baking powder
½ tsp salt
2 tsp ground cinnamon
Frosting
8 oz soft cream cheese
4 cups confectioners sugar
1 tsp vanilla extract
- Preheat oven to 350 degrees; Grease and flour a 9×13 inch pan
- In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into greased pan
- Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool (cool totally before frosting)
Dad would always use cream cheese frosting, which was not included in the recipe I found. But I remember it as 8 oz of softened cream cheese, 4 cups of confectioners sugar, 1 tsp vanilla extract beat together until fluffy and smooth.
I have this Cream Cheese frosting, but I don’t have my carrot cake on the blog. Your ingredients look right to me, I process my carrots and coconut (when I use coconut) in a food processor to get it really fine.
